The “Cudduraci” are a disarmingly simple cake; nevertheless a Calabrian would hardly give up their tradition, even less than the more widespread “pastiera”, doves and eggs (and the lamb in marzipan, another Calabrian tradition).

They are just donuts in the shape of a basket, flower, fish, bell with eggs embedded on the surface and constitute the Easter sweet course par excellence also because they contain eggs, a metaphor for life (young women once gave them their bridegroom as a gift, as was the case in other parts of Italy with similar desserts).

The recipe, as expected, is as simple as its result.

Simply create a fountain of flour on a work surface, put in the middle two whole eggs, sugar, butter (who loves it, lard), vanillin, rind washed and grated lemon and baking powder.

It is to mix until it forms a soft mass that must be flattened with a rolling pin to a thickness of an inch to allow for the funniest part of the operation, to create as many forms as our imaginations wants to create, drawing on religious themes but also lay and varied humanity (if you want to create a small dove, need two coffee beans for the eyes).

In each of our masterpieces it is to add a variable number of hard-boiled eggs, and it is this that constitutes the decoration and the peculiarity of this sweet; on each egg you put thin strips of dough, then brush with the beaten eggs and add the colored “diavoletti”, to finally put them in the oven at 200°C for at least twenty minutes.

 

I “cudduraci” sono un dolce dalla semplicità disarmante ma un calabrese rinuncerebbe ben difficilmente alla loro tradizione, ancor meno che alle piú diffuse pastiere, colombe, uova (e lo stesso agnello di pasta reale, anch’esso tradizionale in Calabria.

Sono soltanto delle ciambelle a forma di cesto, di fiore, di pesce, di campana con delle uova incastonate sulla superficie e costituiscono il dolce pasquale per eccellenza anche perché contengono le uova, metafora della vita (le giovani un tempo ne facevano dono al promesso sposo, come accadeva in altre parti d’Italia con dolci analoghi).

La ricetta, come prevedibile, è semplice come il suo risultato.

È sufficiente creare una fontana di farina sulla spianatoia, mettervi al centro due uova intere, lo zucchero, il burro (chi lo ama, lo strutto), la vanillina, la buccia lavata e grattugiata di un limone e il lievito.

S’impasta fino a formare una massa morbida che dev’essere spianata col matterello fino allo spessore di un centimetro per consentire la parte piú divertente della realizzazione, quella di creare tante forme quante la nostra fantasia desidera crearne, attingendo a temi religiosi ma anche laici e di varia umanità (se si vorrà dar vita a una piccola colomba, serviranno due chicchi di caffè per gli occhi).

A ognuno dei nostri capolavori va aggiunto un numero variabile di uova sode, ed è questo che costituisce la decorazione e la peculiarità di questo dolce; su ogni uovo si mettono delle sottili strisce di pasta, poi si spennella con le uova sbattute e si aggiungono i diavoletti colorati, per mettere finalmente in forno a 200° per almeno venti minuti.
